Berry Beet Bowl Recipe

Hello yogi's! Today I am taking yoga off of the mat and sharing one of my favorite go-to smoothie bowls. It uses berries, peanut butter and... beets! Who would have ever thought of putting beets into a smoothie? I don't know who originally thought to do this, but I am so glad it is a thing.


I have posted some form of this recipe on my Instagram, but I decided with Valentine's Day coming up, that this recipe deserved a post all on its own. After all, beets are an aphrodisiac, so they are perfect for you and your loved one to enjoy. 😉



Another fun thing about beets, is that they help to thicken your smoothie. I have personally been getting a little tired of using frozen banana to make my smoothies and smoothie bowls thick and creamy, so swapping in beets has been my jam lately. When you freeze items like beets (you could also try zucchini, cauliflower, and anything else your heart desires) and then add them to your smoothie, you can get a slight earthy taste, but it's honestly not strong at all (not to me at least). I tried using an unfrozen beet once though and you could taste it way more, so definitely freeze your beets for this one!


Here's what you'll need:

•1 frozen beet (cooked and peeled first of course - you can also just buy the pre-cooked beets, drain and freeze them)

•1 cup berries (I use a mix of raspberries, strawberries and wild blueberries)

•1 tbsp. of PB (or swap in your fav nut or seed butter)

•1 tbsp. flaxseed meal or chia seed

•Optional tbsp. of hempseed or hemp protein powder

•1 cup of oat, or other plant-based, milk (for a smoothie bowl, I use 1 cup oat milk to keep it thicker, but you can always add more or less depending on the consistency you are after)

*Note, I sometimes throw in a few pieces of frozen cauliflower or a handful of spinach too! Great way to sneak in extra veggies and greens.


Directions:

Blend all ingredients together until smooth and dress with your favorite toppings. I’ve topped my bowls with dried fruit, regular fruit, coconut, cacao nibs, nuts, drizzle of PB, etc. Go nuts and enjoy this bowl after taking a sweaty yoga class - preferably with me. 😉
