Blender Pancake Recipe

Hello friends! I want to share a quick and simple pancake recipe for when you just get a hankering for them! Feel free to play with the flavors - maybe stir in some chocolate chips, or swap out the vanilla for some lemon juice and toss in some poppy seeds. This recipe really is versatile, and most importantly, simple.


Here's what you'll need:

-1 1/2 cup dry oats

-1 whole banana

-2 tbsp. flaxseed meal (can try subbing with chia seeds too)

-1/2 tbsp. baking powder

-1 tsp. vanilla extract

-Dash of cinnamon

-Pinch of salt

-Handful of spinach (optional to make them green and get yo' greens)

-1 cup plant-based milk (I love using oat milk, but any will do)


Directions:

Blend all ingredients together. Let sit for a couple of minutes while you lightly oil and heat a pan. If mixing in things like chocolate chips, blueberries, etc., mix in those items last, after you have blended everything.


Use a 1/4 cup to scoop batter out onto the pan. Cook for a few minutes on medium heat (or until some little bubbles/holes pop through) and then flip and cook for another few minutes. Serve with your favorite toppings and some maple syrup. Mmmmm.. syrup.


This recipe has consistently yielded 8 pancakes for me, but you may choose to make them a little larger. I also don't usually share these with David... instead, I eat 4 and freeze the other 4 for later enjoyment. Happy eating!
